This can be made with fresh tomatoes in the summer or canned tomatoes the rest of the year. Butterworks Farm sells dried marfax beans. |

Ingredients : |
|
2 c marfax beans, soaked and cooked
1 sweet onion, chopped
2 large tomatoes, chopped
1/2 c chopped garden herbs
1/2 c maple syrup
1/4 c honey
1/2 c water
1/4 c cider vinegar
salt |

| How to Prepare : |
|
Bake at 325 degrees covered for 3 hours, uncover and continue baking another hour. |

| I found these much too sweet the first time I cooked them, as well as a bit too herby. I reduced the honey/maple syrup to just 1/4 cup of maple syrup the second time I made them, and only added a few dried herbs (no fresh as none handy in January) and they were quite delicious. |
