3 or 4 eggs 1 1/4 c. milk 1 1/4 c. whole wheat pastry flour 1/2 t. salt
How to Prepare :
Preheat oven to 450 degrees. Grease muffin cups or a popover pan with a bit of butter. Combine milk and eggs, then whisk in flour and salt. Fill each cup 1/2 to 2/3rds full. Bake 30 minutes (3 eggs) or 35 minutes (4 eggs). After the first 15 minutes of baking lower the heat to 350 degrees. Do not open oven during baking or they will collapse! Remove from pan immediately when done and prick with a fork to release the hot steam. Serve hot. Makes 12.
