There are a couple of farms in Vermont that specialize in growing popping corn. Because it has to dry over the winter, popping corn does not yield the farmer an immedite return on the investment made to grow it. You can get Brigante's Popping corn at the Shelburne Supermarket. |

Ingredients : |

2 to 3 T bacon drippings (from local bacon!) 1/3 c popping corn |

| How to Prepare : |
|
Melt the bacon drippings over medium high heat in a large pot fitted with a lid.
Add one kernel of corn and wait for it to pop. Once the test kernel pops, pour in the rest of the 1/3 cup of popping corn. Shake the pot occassionally so that the corn doesn't burn. Keep the pot on the heat until the popping slows down to one or two pops per 5 seconds. Pour into a serving bowl, salt immediately while still hot and enjoy! |
